How To Cook Great Jamaican Rice and Peas
1/2 lb. Red Kidney Beans
1 to 2 lb. Rice
12 oz. Coconut Milk
1 stalk Scallion
2 sprig Thyme
2 tblsp. Salt
Soak peas overnigh
Add peas and salt to 1 Quart boiling water in a 2-quart pot, cook until soft
Add the coconut milk, thyme, scallion and a scotch bonnet pepper to the cook peas and let this combination boil for about 15 minutes, if necessary add boiling water depending and the amount of rice you are cooking
Add the rice to the ingredients and stir, using a fork.
After the pot is boiling, reduce heat.
Simmer until rice is cooked
