1 1/2 cups flour
1/2 tbl sp. Salt
3/4 tbl sp. Baking powder
3 tbl sp. cornmeal
21/2 tbl sp. brown sugar
1/4 tbl sp. Rose water
1/2 tbl sp. Vanilla essence
3/4 cup water
3 tbsp. flour 1 tb sp. cornmeal
Oil For frying
Into a mixing bowl sift the first four ingredients. Add the cornmeal and sugar.
Add the rose water and vanilla to the water. Add the water
to the dry ingredients, binding to form soft dough. Knead
lightly. Leave, covered, for 40 minutes. Divide the dough
into eight portions. Flour hands. Knead lightly, and then roll
and pull each portion to form a 6 in. x 1 1/2 in. length,
about l/8 in. thick.
Dip the Festival in flour and cornmeal mixture then fry
in plenty of hot oil until golden brown. Pierce with a fork
whilst turning. Serve hot.
