2 cup diced coconut
1 tbsp. grated root ginger
2 1/2 cups brown sugar
Place coconut in a thick bottomed pan.
Cover with water.
Simmer until coconut softens between 30 mins – 1 hour.
Add more water if necessary.
Slowly add sugar, Stirring the mixture will form a hard ball if tested with a spoon.
Drop the mixture on grease paper, foil paper. Leave to set
