2 lbs Salted (pickled) mackerel
2 Cup Coconut Milk
1 Cup Water
1 Large Onion, chopped fine
2 Stalks Escallion
2 Large Tomatoes
2 Sprigs Thyme
1 Small Scotch Bonnet Pepper
Overnight soak mackerel in water overnight
Drain water of the mackerel and cut into small pieces.
Combine milk and water in a frying pan and boil until it looks oily.
Add the marker al and cover the pot. Cook for 15 minutes on medium heat.
Add and stir the onion, garlic, scallion, tomatoes, scotch bonnet pepper, thyme.
Add Pepper to taste
Reduce the heat and simmer for 20 minutes.
