1 quart ripe unshelled tamarind
5 cup cold water
2 tsp. lime juice
1/2 tsp. grated fresh ginger root
1/2 cup brown sugar
Shell tamarind and remove veins.
Soak in 5 cup cold water, until soft.
Rub through a sieve to get pulp off, using the water in which the tamarind was soaked.
Mix in lime juice, grated ginger root and sugar.
Strain and serve
